Fruity and balanced aftertaste, organic. The extra virgin olive oil by Antico Colle Fiorito originates from Moraiole, Frantoiane, Leccine and Pendoline olives. All grazed by the end of October and the first half of December, when they reach their right maturity. The oil acidity is really low, about 0.1, and it is very easily digestible. Thanks to the care and passion that have been leading the work in these hills for twenty years!

Historical, artisanal, amusing. Bugie (literally “lies”) is the flagship product of the pasta factory Chelucci, which has been running the activity for over a century. Inspired by the traditional tale of Pinocchio, this 100% durum-wheat semolina pasta is dried at low temperature and bronze drawn. It is a rough and porous pasta: the sauce wraps the pasta accompanying it with great taste. Telling the truth: it’s delicious!

Sweet, fresh, scented. The organic blueberry jam produced by Il Baggiolo originates from the mountains of Abetone at a height of 1,400 m. Here you can find wild blueberries, which are harvested by hand. These are the blueberries used for this particular jam characterized by a unique taste and a delicate smell. Three ingredients only, all natural: blueberries, brown sugar and pectin. Pure delicacy and tastiness!

Delicious, traditional, healthy. When you say Riccio of Pistoia, you mean Corsini! The original recipe dates back to the 14th century, when the comfits were filled with anise. Over time, they became more and more delicious with their heart of almonds, nuts, cocoa berries, chocolate and orange. The slow and traditional processing, which lasts about 10 hours, is still in use. Such a speciality is worth the wait!

Red, refined, dry. A ruby intense colour and an important scent: ripened blackberry and precious spices tickle both nose and palate. The grapes are worked patiently according to tradition: after maceration, they are left to mature in oak barrels from 6 up to 12 months. What about the result? Discover the Pistoia Box M

The city of green tells us about its typical confetti. Designed for celebrations and special occasions, just as the bells ring out in the medieval Piazza del Duomo among its many monuments. It is here that our food and wine tour among the tastiness of the Pistoia Box M begins.

We begin to climb the hills of Montalbano, until we stop at a winery belonging to a noble family, which produces a Chianti wine that goes well with steak and game.

We reach the top of San Baronto, land of tireless cyclists. Once here, we deviate slightly to reach a renovated farmhouse with an olive grove overlooking the many terraces. The oil produced here is enchanting, as is the landscape.

In Montecatini we relax in the Torretta thermal park, the part that embraces the Art Nouveau buildings: here we taste the famous waffles, which literally melt in the mouth.

A few kilometres later, heading towards the coast, we stop at Collodi, in the park dedicated to Pinocchio, to whose tale a Pistoia pasta factory has dedicated its own type of pasta. In fact, the shape of the pasta recalls that of the puppet, the Talking Cricket and the whale.

We are only halfway through the journey through the goodness of Pistoia and its territory…

 

We penetrate along the valley of the Svizzera Pesciatina, so named by a Swiss tourist who likened it to the landscapes of his country. From the various peaks, we catch a glimpse of the ten castella scattered here and there, while the Sorana bean plants sprout up high. A unique product for its white colour and quality due to the specificity of this territory.

It is now time to climb towards the mountains, up to the highest peak in Tuscany, the Abetone pass, where the woods hold tasty blueberries, with which truly special jams are made.

Near a medieval bridge and the clear waters of a mountain river, near San Marcello Pistoiese, we find an old bakery. We taste almond biscuits so good you won’t believe it, as we prepare for the descent to the city.

When from the towers of Serravalle we glimpse the panorama that divides the Valdinievole from Pistoia, we imagine the fratricidal struggles for the contention of territory during the Middle Ages. It was here that an agricultural beer was conceived, dedicated to the city of Pistoia and the colours of the city’s coat of arms, ideally taking us back to the centre of the main square. One of the many goodies that are part of the Pistoia Box.
