Zolfino beans: a long history…
The history of the zolfino bean is centuries old, especially in Valdarno where it has been cultivated since ancient times. However, there was a time when this crop was almost completely abandoned. At least until World War II, when some local residents had the opportunity to see that the Allied army consumed it in good quantities. It turned out that this product, which was no longer found in the area, had been purchased from South America. This was due to the fact that some Italian migrants to Argentina had brought seeds to cultivate the vast lands that the New World offered.
Finally, in the late 1980s, this product was rediscovered due to its delicacy and high digestibility. In addition to the natural quality of the product, the experience of the grower, who takes care of the well-being of these plants and the selection of its fruit, also has an impact. Mario takes the same care as one would for a work of art. Even the packaging of the product reflects the excellence of this product.
