From an idea born between father and son, with the intention of combining tradition and innovation, here is Pistoia’s agricultural beer. We are in Birrificio Agricolo Baldi and Matteo tells us how his passion for English, Irish and Belgian beers pushed him to make his own, which took into account the peculiarities of the Italian territory.
Farmhouse beer according to the specification must have at least 51 percent barley produced in-house. It is threshed by special agricultural machines and brought to the laboratory. Here it is deposited at containers where the various processing steps take place.
Matthew shows us the different varieties of hops. They give off an intense aroma, which gives the beers their bitter taste. No pasteurization is carried out during the production process, so that the organoleptic characteristics of the product are entirely preserved.
A beer that should be enjoyed sip after sip, characterized by its dark color and which brings back a pleasant roasted note in the mouth.
We are a short distance from the barley fields, on the family farm where Matteo’s father had a treehouse built. It is here that we admire the view of the Pistoia hills thinning toward the Montalbano hills and on the Serravalle slope, savoring a beer that expresses all the flavor of the territory.
