That of the Dogliani biscuit factory is the story of a Piedmontese confectioner who decided after the war to move to the city of Carrara, at the foot of the Apuan Alps, and founded his own business. The secret of their products
Margherita Dogliani, daughter of the founder, reveals that the secret of their pastries lies in the use of mother yeast. Known since ancient times, it consists of a mixture of flour and water, in which micro-organisms act to allow a totally natural fermentation. This allows the pastry chef to process the products particularly efficiently.
